1/2 cup melted coconut oil
1/2 cup coconut sugar
6 tablespoons pumpkin puree
1 teaspoon vanilla extract
1 1/2 cup 3-2-1 Paleo flour blend
1/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup chopped 85% dark cacao bar
In a bowl mix together your coconut oil, coconut sugar, vanilla extract, and pumpkin puree until smooth and set aside.
In another bowl whisk together your flour, salt, baking soda, baking powder, cinnamon, and nutmeg. Add the flour mixture to your wet ingredients a little bit at a time until everything is well incorporated. Fold in your chocolate chips. If your dough is too sticky to handle at this stage cover and refrigerate it for at least 10 minutes.
Heat your oven to 350°F while your dough is chilling in the fridge and line your baking sheets with parchment paper.
For the spider leg effect you can take a toothpick while the chocolate is still melted and dip it into the melted chocolate chip and draw the legs outward. You can also heat some extra chocolate chips up in a pyrex bowl in the microwave and pour it into a piping bag that has a small hole cut out at the tip. Draw the legs on the cookie next to each chocolate chip.
